  1. Preheat the oven to 375°F. Heat the oil in a large skillet over medium heat. Add the mushrooms and cook, stirring occasionally until golden brown, about 5-8 minutes. Transfer to a plate and set aside.
  2. Pat the chicken dry with paper towels. Season with the salt and pepper. Add the chicken to the skillet, skin side down, and cook until golden brown, about 3-4 minutes per side.
  3. Add the rice, broth and reserved mushrooms. Bring to a simmer over medium-low heat. Stir in the Alfredo sauce. Bake, covered, until the rice is tender, and the chicken has reached an internal temperature of 165°F, about 25-30 minutes.
  4. Top with the peas, if using, and continue to bake, covered, until tender, about 3 minutes. Garnish with the parsley and serve.

Substitute: Substitute 1/2 cup of chicken broth for the Alfredo sauce, and add 1 tablespoon of lemon juice, to create a lemon chicken and rice skillet!
