- Preheat the oven to 375°F. Heat the oil in a large skillet over medium heat. Add the mushrooms and cook, stirring occasionally until golden brown, about 5-8 minutes. Transfer to a plate and set aside.
- Pat the chicken dry with paper towels. Season with the salt and pepper. Add the chicken to the skillet, skin side down, and cook until golden brown, about 3-4 minutes per side.
- Add the rice, broth and reserved mushrooms. Bring to a simmer over medium-low heat. Stir in the Alfredo sauce. Bake, covered, until the rice is tender, and the chicken has reached an internal temperature of 165°F, about 25-30 minutes.
- Top with the peas, if using, and continue to bake, covered, until tender, about 3 minutes. Garnish with the parsley and serve.
Substitute: Substitute 1/2 cup of chicken broth for the Alfredo sauce, and add 1 tablespoon of lemon juice, to create a lemon chicken and rice skillet!
