Put that leftover cooked turkey to good use in this hearty spin on traditional lasagna.

In a skillet, saute the onions in the butter for about 5 minutes.

Add the shredded turkey, the salt, the pepper, the garlic powder, the Italian seasoning, and the water. Stir and simmer for about 10 minutes.

Add the pasta sauce and heat thoroughly, stirring regularly.

In a bowl, combine the ricotta cheese, the spinach, the egg, and ½ cup of the Parmesan cheese. Mix thoroughly.

Place the cooked lasagna noodles on a greased baking sheet (this will make it easier to roll them up later).

Line the bottom of a greased 9x13 baking dish with the pasta sauce/turkey mixture.

Spoon the spinach/cheese mixture on to the lasagna noodles (about 2 to 3 tablespoons per noodle).

Roll up the lasagna noodles.

Place each rolled-up noodle in the baking dish.

Repeat until all 15 noodles are filled and in the dish.

Spoon the rest of the pasta sauce/turkey mixture over the noodles.

Place half of the mozzarella cheese on top. Cover the pan and bake for 30 minutes in a 350-degree oven. Remove the cover, add the second half of the mozzarella and the rest of the Parmesan cheese, return to the oven (uncovered) and heat for another 15 minutes or so until everything is hot and bubbly.

Sprinkle with dried basil if desired.
