  1. Place the chicken in a resealable plastic bag. Add the oil, lemon juice, salt and pepper. Massage the mixture into the chicken.
  2. Preheat a grill or grill pan over medium heat. Brush the excess marinade off the chicken. Grill the chicken breasts, flipping occasionally, until golden brown, or until the internal temperature reaches 165°F, about 8-10 minutes.
  3. Top each chicken breast with 1/4 cup of the mozzarella and continue to cook until the cheese is melted, about 1 minute.
  4. Top each chicken breast equally with the spinach, tomato and avocado. Drizzle the dressing over the chicken breast and serve.

Substitute: Substitute balsamic vinegar for the lemon juice, and sliced fresh mozzarella for the shredded mozzarella, to create an Italian-inspired dish!
