You’ll never miss the raw eggs in this delicious version of the classic salad. Store bought croutons are fine, but if you want to make your own it is easy, and it is a delicious way to use extra bread you have in the house. I’ve used English muffins, whole wheat bread, or traditional crusty white bread.

  1. Add the first 7 ingredients to a mini food processor and blend until smooth.
  2. Heat the oil and add the garlic. Sautee over low heat for 7 minutes. Remove garlic with a slotted spoon, and add bread. Cook for about five minutes, turning occasionally.
  3. Put the lettuce, dressing, Parmesan cheese and croutons in a bowl. Toss and serve. Bon Appétit!
