Bunny Cake

  1. Grease and flour a 1 ½ quart oven-proof bowl and grease and flour a muffin tin.
  2. Fill the bowl with cake batter to approximately 2/3 full. Use the remaining batter to fill the muffin tin (each cup about 2/3 full) with cake batter; you'll use 4 of the cupcakes for this recipe.
  3. Bake the cupcakes in a 350 degree oven for approximately 20 minutes (until a toothpick comes out clean) and bake the main cake for approximately 50 minutes or until a toothpick comes out clean.
  4. Cool the cake and cupcakes for about 15 minutes before removing from the pans. Cool completely before assembling.
  5. In a plastic zip-top bag, combine a ½ teaspoon of water with a few drops of red food coloring. Add 2 cups of the shredded coconut and mix until the coconut achieves a pink coloring.
  6. In a separate plastic zip-top bag, combine a ½ teaspoon of water with a few drops (equal amounts) of yellow and green food coloring. Add 2 cups of shredded coconut and mix until the coconut achieves a nice grassy green color.
  7. Set aside the remaining ½ cup of coconut (not colored); save this for the bunny's tail.
  8. Take one can of frosting and set aside 1/3 cup of frosting (leave this white, for the bunny's tail). Add a few drops of red food coloring and mix until the frosting is pink. This frosting is for your crumb coat.
  9. Take the second can of frosting and add a few drops of red food coloring and mix until the frosting is pink. This will be for your final coat.
  10. Apply a crumb coat of pink frosting to the main cake.
  11. Insert 3 toothpicks in the bottom of 3 of the cupcakes. Attach 2 of the cupcakes to the bottom of the cake (for the feet) and 1 of the cupcakes above (for the tail).
  12. Take a marshmallow and cut a slit in the side. Fill the cavity with frosting.
  13. Attach the marshmallow to one of the foot cupcakes (this is the heel of the foot). Repeat with a marshmallow on the other foot.
  14. Apply a crumb coat to the feet with pink frosting.
  15. Apply a crumb coat to the tail with the reserved white frosting.
  16. Chill the cake for an hour.
  17. Apply the finish coat of pink frosting to the body and feet of the cake. Apply the finish coat of white frosting to the tail.
  18. Sprinkle the pink coconut all over the cake, pressing it to the sides. Do not place pink coconut on the tail or the soles of the feet.
  19. Add the reserved white coconut to the tail.
  20. Take a Fruit Roll-Up and cut out 2 large circles and 6 small ones.
  21. Attach these to the bunny's feet.
  22. Sprinkle green coconut around the bunny (for grass).
  23. Cut bunny ears out of construction paper as shown.
  24. Insert the ears into the cake.
  25. Carefully make a hole in the top of each orange fruit slice candy.
  26. To make the carrots, take green Dots candies and make two small cuts in the wider end of each Dot, then shape with your fingers into a carrot top shape. Stick a green Dot candy in each hole.
  27. Crumble the remaining chocolate cupcake and sprinkle in a few places around the bunny (in the grass). Place each carrot into its chocolate dirt hole.
