- Preheat the oven to 375°F. Line a rimmed baking sheet with aluminum foil. Place the pork loin on the baking sheet.
- Mix the mustard, paprika, garlic powder, salt and pepper. Brush the mixture all over the pork loin. Press the brown sugar into the mustard mixture.
- Bake for 50 minutes to 1 hour or until the internal temperature reaches at least 145°F. Remove from the oven and allow to rest 10 minutes before slicing.
