  1. Preheat the oven to 350°F. Lightly grease a 9x13 inch baking dish with cooking spray.
  2. Layer the onion, pepper, ham and cheese in the baking dish. Whisk the eggs, milk, and salt and pepper to taste in a large bowl and pour over the filling.
  3. Cut the biscuits into quarters and arrange them evenly over the eggs. Brush with the remaining excess milk.
  4. Bake for 40-45 minutes or until the eggs are set and the biscuits are golden brown.

Recipe Tip: To make ahead, assemble the casserole without the biscuits. Cover and refrigerate overnight. Add the quartered biscuits just before baking.
