Bahamian Mac & Cheese

A Caribbean twist on an American favorite. Mac and Cheese with a kick!

- Preheat oven to 350 degrees.
- Boil pasta in 4-6 quarts of water with salt and butter for about 15 minutes.
- Finely chop green pepper and onion.
- Once pasta is boiled, drain and return to the pot.
- On a low heat, add chopped green pepper, onion, eggs butter, and milk to the pasta. Then stir.
- Add 4 1/2 cups of shredded sharp cheddar, and stir until melted.
- Add in salt, black pepper, crushed red pepper flakes, garlic powder and Italian Seasoning. Then stir.
- Thoroughly grease 9x13 (3qt) oven safe glass dish with butter.
- Pour pasta mixture into the dish evenly.
- Cover pasta mixture with remaining 2 cups of shredded Sharp Cheddar cheese.
- Cover layer of Sharp Cheddar cheese with 3/4 cup of shredded Parmesan.
- Place uncovered in oven for approximately 30 minutes or until the top starts to crisp.
