  1. Preheat the oven to broil. Heat a large cast iron skillet over medium heat. Add the bacon and cook, stirring occasionally until golden-brown and crisp, about 6-8 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Set aside.
  2. Add the beef and cook, breaking up into small crumbles with a wooden spoon, until fully cooked and golden brown, about 5 minutes. Drain any excess grease. Add the onion and garlic powder and cook until tender, about 4 minutes. Stir in the queso and cream and bring to a simmer.
  3. Top with the cheddar.
  4. Broil until light golden brown, about 1-2 minutes. Garnish with the lettuce and reserved bacon. Serve with the chips and enjoy.

Substitute: Use ground turkey or ground chicken in place of the ground beef and remove the bacon for a healthier alternative!
