Sandwiches are a great go-to for lunchtime since they’re filling and quick to make. However, if you’re looking for a sandwich that’ll take you out of your normal go-tos – deli meat & cheese, peanut butter & jelly and so on, this recipe may be the perfect choice for an easy weekend meal. Made with frozen popcorn shrimp and a homemade remoulade, plus fresh lettuce and tomato, these Po’boy Sandwiches are sure to be a big hit with your family. Serve with your favorite potato chips, like Food Lion brand, and some fresh fruit for a complete meal.

Whisk together the mayonnaise, Dijon mustard, dill pickle relish, lemon juice, garlic, horseradish, hot sauce, paprika, chives, salt and pepper in a small bowl. Cover and refrigerate the remoulade sauce while preparing sandwiches.

Prepare the frozen popcorn shrimp according to package directions.
- Slice the hoagie rolls in half horizontally leaving one side intact to hold the sandwich together.

Spread the remoulade sauce on the top and bottom halves. Top the bottom half with shredded lettuce and then a layer of tomatoes. Arrange the shrimp over the tomatoes. Close the sandwiches and enjoy.
Recipe Tip: For a toasted sandwich, spread melted butter mixed with garlic powder on the cut sides of the hoagie rolls and toast in a sauté pan face down.
