Raspberry Berry Cobbler Recipe

Spring has sprung, the sun has come, and those raspberries are bursting ripe on the bush. One of the brightest stars of spring produce, raspberries are a nutritious and delicious local berry that you can eat raw or make into a wide variety of easy berry desserts or mixed berry recipes that can delight all ages. Here is one of the more popular mixed berry dessert recipes: a berry cobbler to make at home. With its sweet and tangy berry filling and crispy crust exterior, this raspberry cobbler recipe will have the whole house begging for seconds.
Ingredients you need:
· 2 pounds fresh raspberries (or frozen if fresh isn't available – mixed berries can also do the trick)
· 1 cup sugar
· 4 tablespoons butter
· 2 cups sifted white flour
· 1 cup milk
· 4 teaspoons baking soda
· 1 teaspoon salt
Directions for Making a Raspberry (or Mixed Berry) Cobbler:
First, mix the butter and sugar together with a power mixer or blender on low. Then, slowly add the milk until you get a nice, cream-like consistency.
Sift the salt, baking soda, and flour together until they're well mixed. Then, mix the dry ingredients with the wet ones spoonful by spoonful, mixing together each time so that the batter gradually becomes thicker. When it's done, it'll resemble a thick paste.
Take the batter and pour it into a greased 13x9x2-inch pan. Add the fresh raspberries or frozen berry mix right on top of the batter, and then sprinkle some sugar on top before pouring 2 cups of boiling water onto the whole mixture.
All that's left is to bake the cobbler for 30 minutes at 420 degrees Fahrenheit, or until it turns golden brown, and your raspberry cobbler is done. The whole process takes about 45 minutes in total, and this recipe can feed about eight berry-loving folks.
