Fireside Meals: Easy Campfire Recipes

Planning your family camping dinners is most likely the last thing on your mind when starting your next family adventure. This camping season, make your life (and trip) easier by preparing a few camping dinner ideas beforehand. Foil dinners for camping are the easiest way to save money and time.

Check out these campfire dinner recipes that utilize easy ingredients to keep your family satisfied.

Campfire Breakfast: Scrambled Egg Hash

·         Foil

·         1 cup of frozen hash browns

·         2 eggs, scrambled

·         3 slices of bacon

·         Salt and pepper

·         Shredded cheese (optional)

Fold up the edges of your foil to contain the scrambled eggs. Evenly distribute the frozen hash browns in the bottom of the foil, then pour the scrambled eggs over top. Lay three slices of bacon over top of the egg mixture. Season with salt and pepper to taste, and sprinkle your favorite shredded cheese on top if desired. Carefully join the longer ends of the foil together and fold up in the middle, then gently wrap the shorter ends, leaving about an inch in between the folds and the food. Place on hot coals for about 15 minutes, or until food is done.

Cheesiest Grilled Cheese Lunch

·         Foil

·         Bread

·         Monterey Jack sliced cheese

·         Sharp cheddar sliced cheese

·         Swiss sliced cheese

Place one piece of bread on top of foil. Arrange two slices each of Monterey Jack, sharp cheddar, and Swiss cheese slices. Place another piece of bread on top and fold foil around sandwich. Place foil packet onto hot coals for up to 15 minutes, or until cheese is melted.

Campfire Pizza Pie

·         Aluminum or cast-iron pie iron

·         Cooking spray or butter

·         Bread

·         Canned pizza sauce

·         Shredded cheese

·         Pepperoni

Spray pie iron with cooking spray, or line with butter. Place a piece of bread on either side of pie iron and spread canned pizza sauce on top of bread slices (up to 2 tbs.). Sprinkle cheese of choice on top of one side of sauced bread, and garnish with pepperoni or other pizza toppings. Close pie iron and place on hot coals for 15-20 minutes, or until bread is crisp when opened.
