Blueberry Bars Recipe

Blueberry season is here. It's time to stain those fingers and lips deep indigo and fill up on important antioxidants like anthocyanin, which this delicious and healthy fruit provides. While everyone else is going to be busting out those blueberry pies and mixed berry cobblers, consider recipes that combine the best of both of those favorite blueberry desserts.

The blueberry bar is easy to make, highly portable and immensely satisfying. An easy berry dessert that can even be made from frozen blueberries when fresh ones are not in season, these blueberry bars double as breakfast bars, bursting with berry goodness, as well as healthy afternoon snacks.

 

What You Will Need:

·   1 cup of flour

·   1/2 teaspoon baking soda

·   1/8 teaspoon salt

·   One stick of butter (salted)

·   One egg

·   1 pint blueberries

·   1/2 cup of sugar

·   2 teaspoons cornstarch

·   A squeeze or two of lime juice

 

How to Make Blueberry Bars:

First, preheat the oven to 350 degrees Fahrenheit. Then combine the flour, sugar, salt, and baking powder in a mixing bowl and mix well. Add the butter and egg and then stir the entire mixture until you get a thick, gooey texture.

In another bowl, combine the blueberries, cornstarch, lime juice, and more sugar if you wish (depending on whether you are going for more of a blueberry dessert or a health berry snack bar).

Now spread about half of the dough mixture along the bottom of a buttered 9x9-inch glass baking dish until it is uniform in thickness. Then pour the blueberry mixture on top, also making sure to spread it across the top of the dough. Finally, use the other half of the dough mixture to cover the berry layer completely.

It's now time to bake the blueberry bars in the oven for about 45 minutes to an hour. You will know they are ready when the top becomes lightly toasted and a delicious smell fills the air. This recipe makes about a dozen blueberry dessert or breakfast bars, but chances are they will be gobbled up quick.
